HEMP FALAFEL
Hemp Falafel is a summer favourite of ours that can feed so many people which is quick, healthy and cheap!
Our Falafel is Gluten free as we use a combination of hemp and rice flour. It's also pretty versatile! The patties can be made into balls for salads, wraps and sandwiches or larger patties for burgers and BBQs.
This time we made a salad.
Ingredients (enough for 4 people)
400g drained/soaked chickpeas.
A handful of fresh coriander
2 Tbs Hemp Flour
2 Tbs Rice Flour
1 Tsp Salt and Pepper
1 Tsp Cumin
2 medium sized Carrots
1/2 an onion.
2 garlic cloves.
1/2 a lemon - squeezed
100g Shelled Hemp seeds.
Sunflower oil for shallow frying.
Using a food processor, blend the garlic and onion first.
Then, add chickpeas, carrots, coriander, flour, 50g of shelled hemp seeds lemon juice and spices. Save a small amount of the chickpeas and stir in after the mixture has been blended into a thick dough.
On a flat service sprinkle the remaining 50g hemp seeds and sprinkle with flour. Using your hands roll the falafel mix into golf-ball sized balls.
We fried our falafel balls (could have been baked), by shallow frying oil ( about half an inch deep) and placing the balls into the pan, gradually turning to create an even golden crispiness over the outside. Be very careful as this will be hot and might spit! Once each ball has an all-over golden colour we made a simple salad of avocado, tomato and lettuce to serve! YUMMMM.
